Beetroot Hummus
Beets – you either love them or… you don’t. If you do, Beetroot Hummus will be revolutionary for you and a great way to incorporate more of this incredibly heart-healthy vegetable in your diet. And if you aren’t a beet freak, Beetroot Hummus may be just the ticket for making you a believer!
Beetroot Hummus Ingredients
- 1 can of Sliced Beets – drained very well
- 1 can of Chickpeas/Garbanzo Beans – drained
- 2 large cloves of Garlic – pressed
- 1 Tbsp lemon juice
- 1/2 c of Tahini
- 1/2 tsp Ground Cumin
- approximately 1/4 c Olive Oil
- Salt and Pepper to taste
- Dipping Items
- Warm Pita Bread
- Pita Chips
- Carrots or other chopped vegetables
Beetroot Hummus Directions
Place all the beets, chickpeas, pressed garlic, lemon juice, tahini, and cumin in a food processor and turn it on. Drizzle in the olive oil as it is blending until the mixture is smooth. If you are using a hand blender, start with the 1/4 cup of Olive Oil. Add Salt and Pepper to taste. Please keep in mind that if you are using salted pita chips to dip, you will need a lot less salt as the chips are already salted.
