Buttered Mussels

Camping Recipes

Grilled buttered mussels is a classic coastal dish best served sitting next to a campfire on the beach. This is an easy recipe to cook on a grill or on a small stovetop. Serve with a frosty glass of chilled white wine for an elegant dinner at the campsite.

Ingredients:

  • 2 dozen mussels washed and beards removed
  • 1 cup white wine
  • 1/4 tsp salt
  • 2 cloves crushed garlic
  • 1 stick of butter at room temperature

Directions:

Cream together the room-temperature butter and garlic. Place the mussels, wine, and salt in a saucepan and bring to boil. Simmer until the shells open, about 3 minutes. Remove from heat and pull out the mussels, reserving the liquid. Remove the lid from the base and place each mussel on a foil-lined baking sheet. Place a healthy dollop of the garlic butter on top of each mussel and place on a grill or under the broiler. Cook until the mussel is nicely browned and the butter has melted.

Garnish with a sliver of red and green pepper or parsley as desired. Can be served on their own or in a bowl with some of the broth and hot fresh bread for dipping.
