Cajun Shrimp Salad
Hot, spicy shrimp is perfectly balanced with cool sweet watermelon and feta in the delightful Cajun Shrimp Salad recipe. Serve in large bowls for a healthy dinner option or as a delightful addition to an everyday dinner. Fire up the grill!
Cajun Shrimp Salad Ingredients:
- 1 lb peeled, deveined shrimp
- 1 Tbs Cajun seasoning
- 2 tsp of Canola or other high-smoke point oil
- 2 bags of Spring Mix lettuce
- 4 c of cubed watermelon
- 1 c blueberries
- 1 c Feta cheese
- Bottle of Raspberry Vinaigrette
Directions:
Preheat the grill and rub a little cooking oil on the grates. Pat the shrimp dry then cover both sides evenly with the Cajun seasoning. Grill the shrimp until cooked through, approximately 1 minute per side. Divide the lettuce, watermelon, blueberries, and feta between the bowls then toss with the vinaigrette to coat the greens. Top with the hot grilled shrimp. Enjoy!
