Chickpea Salad Sandwich
I know what the meat-lovers out there are thinking about a Chickpea Salad Sandwich. Pretty much, no way. In fact, if any of you are actually reading this article, kudos! I hope that you actually try the recipe as it is a plant-based, crunch powerhouse of a lunch. Make it in advance and take it in a cooler for a great day on the trail!
Chickpea Salad Sandwich Ingredients
- One 15 ounce can of chickpeas, drained
- 1/4 cup of finely chopped red onion
- 1/4 cup of finely chopped red bell pepper
- 1/4 cup of finely chopped dill pickle
- 1/4 cup of mayonnaise
- 1 tsp yellow mustard
- 1/8 tsp salt
- 1/8 tsp pepper
- 1 small, firm cucumber
- Lettuce of your choice
- Multi-grain sandwich bread
- Hummus or spicy mustard (optional)
Chickpea Salad Sandwich Directions
After rinsing and draining the chickpeas, place them in a large bowl. Use a food processor or mash with a potato masher until thoroughly smashed. Add the chopped veggies, mayonnaise, mustard, salt, and pepper then stir well. Spread more mayo on the bread or try hummus or spicy mustard for a twist. Pile high with the chickpea mix and top with crunchy lettuce. Enjoy!
