Chocolate Paleo Granola

Ingredients:
- 2 cups unsalted almonds
- 2 cup raw pecans
- 2 cups raw pumpkin seeds
- 1 cup unsweetened shredded coconut
- ¾ cup unsweetened cocoa
- ¼ cup melted coconut oil
- ½ cup pure maple syrup
- 1 teaspoon gluten-free vanilla extract
- 1 teaspoon salt
Chop the nuts in a food processor until they are small chunks; not a meal. Combine the melted coconut oil, maple syrup, vanilla, unsweetened cocoa and salt in a bowl then stir in the nuts and shredded coconut. Spread evenly on a parchment-lined cookie sheet. Bake for 20-25 minutes in the center of a pre-heated 300° F oven until the mix is crisp and dry. Do not stir it while it is baking. Allow to cool completely on the pan before packaging in the sandwich bags for your next trip.
