Easy Pumpkin Soup
Believe it or not, there are more amazing dinner options when camping than just grilling! A go-to option is a hearty soup and this time of year, Pumpkin Soup really hits the spot. This is a very easy recipe with minimal ingredients and can be cooked at home, in your RV, over a grill or even a campfire!
1 grated or chopped medium onion (grated is better for a smooth consistency but chopped is fine, especially if purchasing pre-prepared from the produce aisle)
2 tbs Olive Oil
1 29-oz can of Pureed Pumpkin (found in the baking aisle)
2 14.5-oz cans of Chicken Broth (vegetarians can use vegetable broth)
1/2 cup Heavy Cream
2 tsp Pumpkin Pie Spice
3/4 tsp Salt
Heat the olive oil until it is hot but not smoking; it should have a slightly rippled looking surface. Add the onion and cook until soft while stirring, about 3 minutes. Stir in the remaining ingredients and heat for about 3 more minutes until simmering. Top with your favorite garnish; some ideas include pumpkin seeds, your favorite cheese or a sprinkle of cayenne pepper. Be creative
