Elegant Egg Sandwich
This quick and elegant egg sandwich is my go-to breakfast for active days on the trail or the water. Packed with carbs, protein and healthy fats, it provides plenty of energy for your outdoor endeavors. If you are planning an early start, the sandwich is great hot or cold so you can bring it along in a sandwich bag to eat later in the morning.
The ingredients are basic and most likely already in your refrigerator.
- Gourmet sandwich bread – choose one that is a little firmer as the sandwich is quite hearty
- Fresh spinach leaves
- Hard boiled eggs
- Sea salt
- Cracked pepper
Lightly toast the bread and smash some of the avocado on it as a base. Layer with fresh spinach leaves, sliced avocado and hard boiled egg slices. Top with a sprinkle of sea salt and black pepper to taste. This is the base recipe, please add on ingredients and let me know the best ones!
