There is nothing quite like refreshing cool fudgesicles on a hot Florida day. This nutritious version of the store-bought favorite is very easy to make and a much healthier option for you and your family. With minimal ingredients that you probably already have in your RV, it is a perfect option for a tiny kitchen.
- 1 cup dark chocolate sweetened almond milk
- 1/4 tsp vanilla extract
- pinch of salt
- toasted coconut (optional)
- cocoa powder (optional)
Combine the first three ingredients into a shaker cup and vigorously shake until the almond milk has become frothy. Fill ice pop molds and insert wooden sticks. Freeze at least four hours but preferably overnight.
To remove the fudgesicles from the molds, run the pops under hot water until they easily slide out of the molds. Immediately roll the pops in the toasted coconut and sprinkle with cocoa powder. Serve with a smile!
