Grilled Artichokes
Add a fresh and smokey flavor to your artichokes by finishing on the grill and drizzling with a garlic-lemon dressing. This is one of my family’s favorite ways to eat artichokes and a real treat when camping. Serve as an appetizer with a light chardonnay or as a main course side.
Grilled Artichoke Ingredients:
- 4 Artichokes
- 1/4 c grapeseed or other high smoke-point oil
- Salt and Pepper to taste
- 1/4 cup lemon juice
- 1/4 c olive oil
- 4 cloves pressed garlic
- Salt and Pepper to taste.
Directions:
Trim the top 1/2″ off of the artichokes, the stem, and any outer loose leaves. Cut in half then scoop out the furry choke in the center. Steam for about 25 minutes until tender but not too soft. This step can be completed before your trip to make the prep work even quicker.
While the artichokes are steaming, whisk together the lemon juice, olive oil, pressed garlic, salt, and pepper. This will be a final dressing to add additional flavor when done grilling.
Drain well. Brush both sides of the artichoke with the grapeseed oil and sprinkle with salt and pepper to taste. Place the center side down on the preheated grill. Cook over medium-high heat for 8-10 minutes. Remove from the grill and drizzle with the dressing.
