Healthy Open-Faced Sandwich
A healthy open-faced sandwich featuring crusty bread, creamy avocado, and fragrant herbs is a light yet comforting lunch. This is a tried-and-true recipe that can be assembled in just a few minutes from ingredients that are probably already in your fridge.
- Artisan-style bread
- Extra Virgin Olive Oil
- Grape tomatoes
- Endive or small romaine leaves
- Fresh herbs of your choice (optional)
- Salt and fresh-cracked pepper to taste
Cut approximately 1″ slices of bread and brush both sides with olive oil. Lightly toast both sides under the broiler until the edges are golden brown. Top each piece with a slice of avocado, a slice of romaine or endive. and grape tomato halves. Drizzle with more olive oil and top with salt, pepper, scallions and any other fresh herbs that you may prefer.
You can add additional ingredients depending on your mood and the whats in your fridge. Laying out a selection of different options for a ‘sandwich buffet’ can be a fun and entertaining experience for the whole family!
