Korean Corn Cheese Sandwich

Korean Corn Cheese is a popular side dish but is best known as an Anju.  Anju is a general term in Korea used to describe a food that is eaten with alcohol and this happy hour treat definitely pairs well with many different wines or beers depending on the cheese selection. Using the cheesy, sweet, and savory concoction as the stuffing in a grilled sandwich gives the Korean mainstay a little American lunch cred.

Korean Corn Cheese Sandwich Ingredients:

  • 1 Tbs butter (unsalted is best if you have it)
  • 1/2 cup diced sweet onion
  • 1 1/2 cups sweet corn kernels drained
  • 1 tsp chili flakes
  • 2 cups Mozzarella or other low moisture cheese
  • Fresh ground pepper
  • 3 Tbs mayonnaise plus additional for grilling
  • white bread

Directions:

Melt the butter in a frying pan over medium heat. Add the diced onion and saute until translucent.  Add the sweet corn kernels and cook another 5 minutes, stirring frequently.  Remove from the heat and stir in the chili flakes, mayonnaise, cheese, and pepper to taste.  Brush both sides of your bread with a little mayonnaise.  Fill with topping and place on grill or a panini press.  Cook until the bread is crispy and golden brown.
