Lemon Arugula Gnocchi
Lemon Arugula Gnocchi is a healthy meal which is very easy to make on the road. Not only do the small potato dumplings provide more nutrients than traditional pasta, you feel full for much longer leading to less snacking later in the night. You can make your own gnocchi which is very easy even in an RV, but there are plenty of ready-made options at the grocery which makes this recipe even easier!
Ingredients:
- Gnocchi
- 1/4 c Butter
- Juice of 1/2 of a Fresh Lemon
- Salt and Pepper
- 2 c Arugula
- 1/4 c shaved Parmesan Cheese
Directions
Boil gnocchi as per the directions on the package and drain. Reserve a little of the water if needed later to reconstitute the sauce.
Heat the butter over medium in a saucepan until brown and nutty, about 2 minutes. Stir in the Gnocchi and lemon juice. Season with salt and pepper to taste. If the sauce seems a little dry, add a tablespoon or two of the reserved boiling water to thicken the sauce.
Plate up the gnocchi and top with fresh arugula and shaved Parmesan cheese. Enjoy!
