Lentil Jar Salad

Lentil Jar Salad is a make-ahead meal that is healthy and incredibly convenient on-the-go. Adding lentils packs additional protein in your meal which will keep your body fueled for an active day outside.

The portion sizes will vary based upon your container size and personal preference.


  • Cooked Lentils
  • Tomatoes
  • Lettuce
  • Red Onion
  • Avocado
  • Fresh Lemon
  • Balsamic Vinegar
  • Olive Oil
  • Fried Tofu
  • Salt and Pepper to taste


Chop the vegetables into bite size pieces. Layer the lentils and vegetables in the jar.  Squeeze lemon juice all over the avocados to prevent them from browning.  Add balsamic vinegar, olive oil, salt and pepper to taste or use your favorite dressing instead.  Top with fried tofu and place in a cooler or refrigerator. Dump in bowl and mix when you are ready to eat!
