Mushroom Sage Pasta

Mushroom Sage Pasta is a very easy to make recipe that doesn’t require a ton of ingredients – always a plus when looking for wholesome meals to prepare in a small RV kitchen. With a little preplanning before your trip, you can even pre-cook the pasta to al dente, toss with oil, and have in the fridge to whip up quick meals on the go.

Ingredients:

  • 1 stick of salted butter
  • 8-10 chopped sage leaves
  • 1 lb cremini or white mushrooms
  • enough pasta for 4 servings
  • Fresh shredded Parmesan
  • Salt and pepper to taste
  • Hot fresh bread on the side (optional)

Mushroom Sage Pasta Directions

If you did not pre-cook the pasta before your trip, boil it until it is al dente then drain. Heat a large frying pan on medium-high heat and add the butter after hot. The butter will sizzle initially then turn a light golden brown. Add the mushrooms and sage at this point then saute until the mushrooms are soft.  Season with salt and pepper. Toss in the pasta and cook an additional minute or two until the noodles are heated through.  Plate then top with fresh shredded Parmesan. Break off a chunk of hot fresh bread, grab a glass of wine and enjoy!
