Pineapple Greek Salad
Pineapple Greek Salad is a fresh take on a classic dinner salad. Adding pineapple to the mix creates an unusual flavor combination that is surprisingly good. Tip: if you are grilling, double the dressing amounts and marinade your meat and vegetables for the grill in the same mix!
- Lettuce (your favorite variety is fine)
- Kalamata Olives cut in half
- Grape tomatoes cut in half
- Small can of pineapple chunks
- Feta Cheese chunks
- 1/4 cup extra virgin Olive Oil
- 2 Tbs Red Wine Vinegar
- 1 Tbs Lemon Juice
- 1/8 tsp dried Oregano
- 1/4 tsp Salt
- 1/8 tsp Pepper
Pineapple Greek Salad Directions:
Put the Olive Oil, Red Wine Vinegar, Lemon Juice and seasonings in a shaker or hand blender and mix until thoroughly emulsified. If you want a creamier dressing, add a little mayonnaise to the mix. Layer the vegetables attractively on a plate and drizzle with the dressing. Enjoy!
