Ricotta Butter Pasta
Elegant and easy to prepare dinners are possible in an RV. This recipe for Ricotta Butter Pasta is one of my favorites for hosting neighbors at the campground or just a quick, romantic evening by the campfire. The prosciutto is not needed if you are vegetarian.
- Lemon Juice
- Fresh Flat-leafed parsley
- Ricotta Cheese
- Salt and pepper
Boil the pasta as per the instructions on the box. Drain and stir in enough butter to coat the noodles. Add lemon juice, scallions, parsley, prosciutto and salt and pepper to taste. Top with a dollop of ricotta cheese. If you love the lemons and want to kick it up a notch, try grating a little of the lemon peel on top.
Pour a glass of wine and enjoy!
