Sweet Rice Breakfast Bowl

I never seem to make exactly the amount of rice for dinner and always end up with extras. After throwing out way too much rice, I decided to try some simple breakfast recipes and was very happy with the results. In fact, the Sweet Rice Breakfast Bowl is so good, I always make a little extra rice for a couple of days of warm, delicious breakfasts!

Sweet Rice Bowl Ingredients:

  • 1 cup cooked rice
  • 1 cup milk (preferably almond or oat but dairy will work also)
  • Pinch of cinnamon
  • Pinch of salt
  • Dried Cranberries
  • Walnuts
  • Honey or brown sugar
  • A dollop of vanilla yogurt (optional)

Sweet Rice Bowl Directions:

Combine the rice, milk, cinnamon, and salt in a saucepan. Bring to a boil then reduce heat. Simmer for 5-7 minutes until creamy. Serve topped with dried cranberries, walnuts, and a sprinkle of brown sugar or drizzle of honey.  If you have vanilla yogurt, a little cool dollop is a great addition but not necessary.
