Beetroot Hummus Sandwich
This open-faced Beetroot Hummus Sandwich is the perfect way to incorporate some of the heart-healthy vegetable into your diet. The hummus has a gorgeous red color which makes it a fun and tasty addition to your morning or lunch routine. I like to offer a spread of different toppings and let my family members build their own creation!
Beetroot Hummus Sandwich Ingredients:
- Firm bread like a sprouted whole grain or sourdough
- Beetroot Hummus
- Toppings (whatever you like but I prefer the following)
- Avocado
- Arugula
- Grape tomatoes
Directions:
Pretty simple. Toast the bread, smear with the Hummus, and then add your favorite toppings. If you have kids in your family, let them create their own – it’s a great way to incorporate more veggies in their diet!
